Aaah, pizza. One of America’s favorite fast foods. After we made the change to a TF lifestyle, every so often I would dreamily recall the nights where my dinner prep consisted of calling Domino’s or Pizza Hut. No muss, no fuss, and unfortunately, no nutrition, either. So the other day, when Mo asked if we could have pizza, I just knew I could find a sourdough pizza crust recipe that would be healthy and delicious.

My sourdough starter has been bubbling away for many weeks now, enabling me to make fantastic pancakes, rolls, and once, a loaf of bread. The pancakes were our favorite, until now. Here’s my sourdough pizza recipe:

  • 1.5 cups sourdough starter
  • 2 cups flour
  • 1/2 tsp RealSalt
  • 2 tbsp olive oil

Method: the night before, combine the starter with the flour and cover. The next day, about 3 hours (or so) before you want to bake your pizza, give it a stir, add the salt and oil, and stir until well mixed. Remove from bowl and knead for about 10 minutes, or until the dough is smooth and elastic. Place in an oiled bowl, cover, and let rise until doubled in size. Punch down and divide into two balls; let the balls rest for about 15 minutes, and then press into your pizza pan. Add toppings and bake @ 450F for 10 minutes or until the toppings are bubbly.

That’s it! How easy was that? It’s just as simple as using yeast, but a lot more nutritious, due to the phytic acid removal via the flour soaking. Not only will this dough give your pizza a wonderfully sour flavor, but soaking renders the nutrients in the wheat more digestible.

The girls really loved this pizza–and I loved how they cleaned their plates. Nothing was wasted, and we had a lovely family dinner. I hope I’ve inspired you to try making your own pizza at home; it’s really not difficult, and you won’t have to worry about Domino’s getting your order wrong. :)

    I'm glad you posted this. I have been using a crust that we like but that is not soaked. It will be good to have another use for my sourdough (had yummy SD pancakes this morning). We live so far out of town that there is no pizza delivery!

    @Wardeh: Let me know how it works for you! It may need some tweaking, depending on the type(s) of flour you use :)

    @Millie: We love SD pancakes too! The buttermilk type pale by comparison–so bland! :)

    Your sourdough pizza looks wonderful! I haven't tried making sourdough before, but I'm sure it's easy enough? I found your blog through the OK list and I've been making Kombucha tea for the last few weeks. It's been a lot easier than I thought and I might be ready to try sourdough! I'm happy to have found your blog and will follow along on your food adventures!

    Looks yummy! I like to make pizza on pitas or english muffins since I haven't gotten around to sourdough. This looks even more nutritious though! :) I really like ranch dressing with my pizza and always make homemade ranch with yogurt, sour cream or kefir. It adds some nutrition and probiotics to even take out pizza :)
